Paleo Almond-Crusted Cod with Chermoula and Cucumber-Lemon Salad

Using almond flour instead of regular flour gets you the satisfying crunch of breaded fish without the toxic gluten. Cod is a good, sustainable choice, but any other wild-caught, mild-flavored fish will do fine. 

Paleo Almond Crusted Fish with Chermoula and Herbed Cucumber salad

  • 1 egg
  • ¼ cup almond meal
  • ½ cup slivered almonds
  • 2 skinless Pacific cod fillets or other local, sustainable fish
  • 2-3 cucumbers
  • ¼ cup pitted kalamata olives
  • ¼ cup pitted castelvetrano olives
  • 1 lemon
  • ¼ cup sunflower sprouts
  • Fresh cilantro
  • Fresh flat-leaf parsley
  • 1 garlic clove
  • Chermoula spice mix (coriander – cumin)
