Using almond flour instead of regular flour gets you the satisfying crunch of breaded fish without the toxic gluten. Cod is a good, sustainable choice, but any other wild-caught, mild-flavored fish will do fine.
- 1 egg
- ¼ cup almond meal
- ½ cup slivered almonds
- 2 skinless Pacific cod fillets or other local, sustainable fish
- 2-3 cucumbers
- ¼ cup pitted kalamata olives
- ¼ cup pitted castelvetrano olives
- 1 lemon
- ¼ cup sunflower sprouts
- Fresh cilantro
- Fresh flat-leaf parsley
- 1 garlic clove
- Chermoula spice mix (coriander – cumin)
